Recouvrez une plaque pour le four de papier cuisson et \u00ab\u00a0farinez\u00a0\u00bb la avec le m\u00e9lange sucre \/ ma\u00efzena mais conservez environ la moiti\u00e9 du m\u00e9lange.<\/li>\n<li>D\u00e9coupez les fruits s\u00e9ch\u00e9s de votre choix en petits morceaux. S\u00e9parez le blanc du jaune des \u0153ufs. Conservez les jaunes pour une mayonnaise par exemple.<\/li>\n<li>\u00c9talez une feuille de papier sulfuris\u00e9e sur votre plaque pour le four et \u00e9talez les fruits secs (amandes et pistaches) dessus. Enfournez pour environ 5 \u00e0 10 min afin de les torr\u00e9fier.<\/li>\n<li>Attention, cela va s&rsquo;acc\u00e9l\u00e9rer maintenant : versez le sucre en poudre dans une casserole avec le glucose et 200 ml d&rsquo;eau. Mettez sur feu moyen, m\u00e9langez, et laissez cuire jusqu&rsquo;\u00e0 ce que la temp\u00e9rature arrive \u00e0 145\u00b0C. Arriv\u00e9 \u00e0 145\u00b0C, ajoutez le miel et m\u00e9langez. La temp\u00e9rature va alors descendre, laissez cuire \u00e0 nouveau le sirop jusqu&rsquo;\u00e0 ce que la temp\u00e9rature remonte \u00e0 145\u00b0C.<\/li>\n<li>Pendant ce temps, montez les blancs en neige bien fermes, au robot ou \u00e0 la main pour les plus courageux.<\/li>\n<li>Versez le sirop arriv\u00e9 \u00e0 bonne temp\u00e9rature sur les \u0153ufs tout en continuant de les fouetter, ajoutez ensuite les fruits secs (amandes et pistaches) et les fruits s\u00e9ch\u00e9s (ceux de votre choix). M\u00e9langez \u00e0 nouveau rapidement.<\/li>\n<li>Coulez la pr\u00e9paration sur la plaque farin\u00e9e au d\u00e9but de la recette sans \u00e9taler. Recouvrez la pr\u00e9paration \u00e0 nougats avec une deuxi\u00e8me feuille de papier cuisson. \u00c0 l&rsquo;aide d&rsquo;un rouleau \u00e0 p\u00e2tisserie, \u00e9talez le nougat sur 3 ou 4 cm d&rsquo;\u00e9paisseur. Retirez ensuite la feuille du dessus et \u00ab\u00a0farinez\u00a0\u00bb le sommet du nougat avec le reste de m\u00e9lange ma\u00efzena \/ sucre glace.<\/li>\n<li>R\u00e9servez au moins toute une nuit avant de d\u00e9couper la plaque de nougat et c&rsquo;est pr\u00eat !<\/li>\n<\/ol>\n<h2>Quelques informations<\/h2>\n<p>Cette recette de nougat est plut\u00f4t facile \u00e0 pr\u00e9parer et vous donnera un nougat assez mou et non dur. C&rsquo;est plus ou moins la recette classique traditionnelle dans laquelle on ajoute des fruits s\u00e9ch\u00e9s. Choisissez bien vos fruits s\u00e9ch\u00e9s car le r\u00e9sultat sera diff\u00e9rent rien qu&rsquo;en modifiant cet ingr\u00e9dient !<\/p>\n<p>Vous pouvez aussi modifier les fruits secs en ajoutant des noisettes ou des noix par exemple !<\/p>\n<p>Pour la petite histoire, le nougat est une confiserie typique du pourtour m\u00e9diterran\u00e9en. Il peut \u00eatre blanc comme ici ou noir car sans blanc d&rsquo;\u0153uf.<\/p>\n<p>Selon son pays d&rsquo;origine, le nougat va changer de nom, d&rsquo;aspect et aussi de saveurs. Chez nous, nous avons le nougat de Mont\u00e9limar ou de Provence. En Espagne, on retrouve le fameux turr\u00f3n de Xixona ou d&rsquo;Alicante, mais aussi d&rsquo;Agramunt.<\/p>\n<p>En Italie, beaucoup de vari\u00e9t\u00e9s diff\u00e9rentes telles que le torrone, la copeta ou le mandorlato. Les Marocains ont leur version avec le jabane.<\/p>\n<p>On pense que le nougat est originaire d&rsquo;Alep en Syrie, la preuve en est un livre de recettes arabe datant du 10e si\u00e8cle. On le nomme alors natif.
