D\u00e9coupez les tr\u00e8s finement et mettez-les \u00e0 cuire \u00e0 couvert \u00e0 feu tr\u00e8s doux avec un filet d&rsquo;huile d&rsquo;olive. Apr\u00e8s 10 min de cuisson, ajoutez 1 bonne cuill\u00e8re \u00e0 soupe de cr\u00e8me fra\u00eeche ainsi qu&rsquo;1 cuill\u00e8re caf\u00e9 de sel fum\u00e9 Viking.<\/li>\n<li>M\u00e9langez et prolongez la cuisson \u00e0 feu mais \u00e0 d\u00e9couvert cette fois-ci pour encore 5 min.<\/li>\n<li>Pendant ce temps, concassez les biscottes afin d&rsquo;obtenir une chapelure et m\u00e9langez-la avec 40g de beurre. Ajoutez, si vous le souhaitez, un m\u00e9lange de graines ou du m\u00e9lange Dukkah.<\/li>\n<li>Mettez 3 cuill\u00e8res \u00e0 soupe de cr\u00e8me fraiche dans un bol, pressez le citron, ajoutez les herbes de Provence et poivrez \u00e0 votre guise.<\/li>\n<li>D\u00e9coupez des morceaux de poisson de la taille d&rsquo;une bouch\u00e9e et badigeonnez-les avec la marinade tout juste pr\u00e9par\u00e9e. R\u00e9servez au frais.<\/li>\n<li>Le crumble est assez difficile \u00e0 \u00ab\u00a0d\u00e9mouler\u00a0\u00bb, le mieux est d&rsquo;utiliser des ramequins individuels mais vous pouvez utiliser un seul moule \u00e0 crumble.<\/li>\n<li>Allumez votre four \u00e0 180\u00b0C (th. 6).<\/li>\n<li>Remplissez le fond du ou des ramequins avec la fondue de poireaux, ajoutez une couche de morceaux de poisson et ajoutez la derni\u00e8re cuill\u00e8re de sel Viking par dessus. Terminez en d\u00e9posant la p\u00e2te \u00e0 crumble sur le tout et mettez au four pour environ 20 min de cuisson.<\/li>\n<\/ol>\n<p>Voici comment pr\u00e9parer un bon crumble de poisson aromatis\u00e9 au sel fum\u00e9 des Vikings !
