Difficile \u00e0 trouver dans le commerce, on peut soit la faire soi-m\u00eame, soit la remplacer par de l&rsquo;\u00e9corce d&rsquo;orange ou de yuzu.<\/p>\n<\/div>\n<h2>Pr\u00e9paration de la recette<\/h2>\n<ol>\n<li>Pesez toutes les \u00e9pices et herbes \u00e0 l&rsquo;aide d&rsquo;une balance de cuisine. Les ingr\u00e9dients peuvent \u00eatre en poudre ou entiers, au choix.<\/li>\n<li>Si vous utilisez des \u00e9pices enti\u00e8res, r\u00e9duisez-les en poudre avec un moulin \u00e0 \u00e9pices (vous pouvez aussi utiliser un moulin \u00e0 caf\u00e9, un mortier, ou un mini-hachoir).<\/li>\n<li>M\u00e9langez toutes les \u00e9pices.<\/li>\n<li>Mettez le m\u00e9lange d&rsquo;\u00e9pices dans une po\u00eale, faites chauffer \u00e0 feu moyen tout en remuant afin de ne pas bruler le m\u00e9lange, cela pendant 2 ou 3 min. Cette \u00ab\u00a0torr\u00e9faction fera ressortir le go\u00fbt du curry japonais.<\/li>\n<li>Laissez refroidir, puis r\u00e9servez le Kar\u0113ko dans un r\u00e9cipient herm\u00e9tique.<\/li>\n<\/ol>\n<h2>Plus d&rsquo;informations sur le curry de Japon<\/h2>\n<p>Cette recette de Kareko (\u00ab\u00a0Kare\u00a0\u00bb signifiant \u00ab\u00a0cari\u00a0\u00bb en japonais) peut se pr\u00e9parer en avance, elle se conservera facilement pendant une ann\u00e9e \u00e0 l&rsquo;abri de la lumi\u00e8re et de l&rsquo;humidit\u00e9.<\/p>\n<p>On associe g\u00e9n\u00e9ralement le curry \u00e0 l&rsquo;Inde, \u00e0 juste titre, mais rarement avec le Japon, alors qu&rsquo;il est tr\u00e8s consomm\u00e9 dans le pays du soleil levant. En effet, contrairement aux croyances populaires, les Japonais mangent plus souvent du curry que des sushis, avec 88% des Japonais qui affirment manger du curry au moins une fois par mois, contre 63% pour les sushis.<\/p>\n<p>Ce m\u00e9lange d&rsquo;\u00e9pices s&#8217;emploie au Japon pour parfumer les plats de viande, \u00e0 base de boeuf, porc ou poulet, mais aussi les plats de l\u00e9gumes, souvent \u00e0 base de pomme de terre ou de carottes.
